Carrot Cake Oats πŸ₯•I still have leftover carrot and this carrot cake oatmeal is the perfect recipe to use it. Growing up I never really eat carrot cake that often, instead for birthdays my family often eat black forest cake or regular vanilla cake. When I first heard of carrot cake, it feels weird. Who puts carrot in a cake? Nuh uh. One time, my friend had a birthday & her birthday cake was carrot cake. It’s my first carrot cake. Not gonna say I was a fan, but not bad as I thought it would be. Anyway, another sweet oatmeal recipe for the day. I know that most of you prefer savory oatmeal more & I’m in the process of creating another recipe. Stay tune! πŸ˜‹
4tbsp rolled oats
8tbsp soymilk or any non dairy milk
6tbsp water
1/2 carrot, shredded
1tbsp raisins
1tbsp brown sugar
1/4tsp vanilla powder or sub with vanilla extract
1/4tsp cinnamon powder
A pinch of ground ginger
A pinch of nutmeg
A pinch of salt

Mix seeds
Peanut butter
Extra raisins
Extra shredded carrots

1. Cook shredded carrots & 6tbsp water for 8-10mins in a saucepan with medium high heat.
2. After 8-10mins, add in oats, raisins, soymilk, brown sugar, cinnamon powder, ground ginger, nutmeg, vanilla powder & salt. Cook until thicken.
3. After thicken, turn off the heat & transfer into a bowl. Top with topping of your choice.
4. Serve warm & enjoy! πŸ˜‹
