Calling all KALE, AVO and TOFU lovers…Which one would you choose? I obviously couldn’t..hence I made all of them..😋🥰
~ Saute red onions with a bit of olive oil, add chopped kale and stir fry for 2-3 minutes. Remove from heat, season with salt, pepper and sprinkle with a bit of vinegar (optional). Add chopped oranges and pomegranate seeds. Alternatively, if you don’t have oranges&pomegranate, the combination of toasted walnuts with dried cranberries is also great 😊
~ Mashed half an avo, sprinkle with salt&pepper. Squeeze some lime/lemon (I prefer lime). Add chopped tomatoes, chillis, coriander (omit if you don’t like any of the additional ingredients). Sprinkle with some sesame seeds.
~ Slice tofu to medium thickness (I used curried flavoured tofu), feel free to use plain. Coat them in some corn flour seasoned wth salt,pepper,paprika & turmeric (my basic seasonings for pretty much everything..:-)). Fry for couple of minutes in a little bit of coconut oil until its golden ( you don’t need to deep fry it and alternatively feel free to use an air fryer). I served it with mango and spices chutney but would be equally great with sweet 🌶 sauce 😀
