It’s been a while so thought I better start sharing some recipes again 🤪 This one was a bit of a throw together meal that turned out SO delicious I had to share.

I used Asda free-from soft cheese and @applewood smoky vegan cheese for epic melting. 👌🏻

INGREDIENTS
🔹300g tagliatelle
🔸Jar of artichokes
🔹170g dairy-free soft cheese
🔸80g spinich
🔹1/2 stock cube + 200ml water
🔸150ml soya milk
🔹2 tbsp lemon juice
🔸3 tbsp nutritional yeast
🔹Black pepper for seasoning
🔸(optional) vegan cheese for topping

METHOD
▪️Preheat oven to 190°c.
▪️Boil the pasta for 9-10 mins, then drain and return to pan.
▪️Drain the artichokes then roughly chop.
▪️Add soft cheeze, artichokes, lemon juice, veg stock, and nutritional yeast to the pasta. Stir altogether on a low heat until soft cheese melts.
▪️Add soya milk and spinich and stir through until you have a loose sauce. Season generously with black pepper.
▪️Transfer pasta mix to an oven dish, top with grated vegan cheeze (optional) and bake in the oven for 25 mins.
