Vegetarian Stir Fried Rice Noodles.
Soak the noodles in water for 1 hour. Just before cooking, drain the noodles from the soaking water and pour hot water on the noodles to pre-cook them.
Start by frying the firm tofu slices until all sides are golden brown. Set aside on a kitchen paper to absorb the excess oil. In the same pan, stir fry the vegetables (carrots, fresh mushrooms, rehydrated shiitake mushrooms, onions, bok choy). When the vegetables are half-cooked, add the tofu and the pre-cooked noodles. Combine all the ingredients and push them on one side of the pan. Scramble one egg on the space you made, then mix it to the noodles stir fry. Finally add the sauce made with 2 tsp potato startch, 1 1/2 Tbsp vegetarian oyster sauce, 1 Tbsp dark soy sauce, 1 Tbsp light soy sauce and 3 Tbsp water. Mix well until the sauce is reduced. Finally garnish with chives, green onions, cilantro etc.
I like to drizzle a little bit of crispy chili oil on top, and there you have one easy and healthy noodles recipe!
For a vegan version ?, skip the egg!
