Butternut Squash & Mushroom Risotto ✨⁣

This was such a yummy, comforting dish and the garlic mushrooms on top went so well with it 🤤⁣ makes 3-4 servings so it’s perfect for meal prepping 💗⁣

Ingredients 🍲⁣
1 butternut squash, peeled and cubed⁣
200g mushrooms, sliced⁣
250g Arborio rice⁣
2 onions⁣
5 cloves garlic⁣
1 tin coconut milk⁣
3 tbsp nutritional yeast⁣
300ml vegetable stock⁣
1 tbsp oregano ⁣
Olive oil⁣
Salt and pepper ⁣

Method 👩🏼‍🍳 ⁣
1. Cook the butternut squash by boiling for 10 mins, then drain and set aside⁣
2. Chop the onions and 4 cloves of garlic finely. Add them to a wok with olive oil, salt and pepper, oregano, and cook till soft⁣
3. Add in the rice, coconut milk, nutritional yeast, vegetable stock and salt. Stir and let cook for 15-20 min~ u may need to add more water as it cooks⁣
4. Blend up the butternut squash in a food processor or blender to make a purée⁣
5. In a pan, sauté the mushrooms with the remaining garlic and some salt⁣
6. Add the mushrooms and butternut squash to the risotto once it’s cooked, serve and enjoy 🤠
