Butter ? Bean Bowl ? for Lunch today ?

Made this by sautéing about 8-10 grape tomatoes (and 1 regular tomato that I had leftover, diced) in 2 tsp olive oil with 2 tbsp fresh, chopped parsley, 1 red bell pepper, chopped, and 1/2 medium sized (peeled & diced) sweet potato over medium-high heat in a non-stick pan for 10 minutes. Then I added 3/4 cup vegetable broth and let everything simmer for 5 more minutes before adding 1 can of butter beans (rinsed and drained), 1 green onion, chopped, a handful of fresh spinach and a little fresh thyme and more parsley. (The broth was salty enough, so I didn’t need to add any extra salt). I cooked it for 2 more minutes until the sweet potatoes were tender. Yum!
