Buffalo cauliflower ??

Sprucing up veggies that can seem boring! This one is far from boring. There are some veggies that I love on the plainer side (bok choy, green beans, sweet potatoes…) but there are some veggies that require a bit more TLC.

The subtle, cauliflower taste gets completely replaced by the full on tangy and spicy flavour, so you’re left with the amazing crunchy texture and ‘tougher’ bite. This is really delicious with some aioli! ?

? Ingredients

3/4 cauliflower, cut into florets
1/2 cup plain flour
1/2 cut oat milk
1/4 cup water
1 tbsp garlic powder
1 tsp paprika
1 tsp salt
3/4 cup panko breadcrumbs
1 cup buffalo sauce @franksredhot
2 tbsp liquid sweetener (I used golden syrup)

Optional: spring onions and vegan aioli to serve

1. Make the batter: flour, oat milk, water, garlic powder, paprika and salt. Stir until smooth. Preheat oven to 175C.
2. Dip each cauliflower floret into the batter and then into panko breadcrumbs.
3. Line a baking tray and bake cauliflower for 25 minutes.
4. Meanwhile, mix buffalo sauce with liquid sweetener.
5. Coat baked cauliflower in the buffalo sauce and place back in the oven for a further 30 minutes until mostly crispy.
6. Serve immediately with some vegan aioli and spring onions!
