Buddha Bowls – the perfect way to use up any veg you have in the fridge 🌿 (it was quicker to put together than it looks!)⠀⁣
⠀⁣
When building a lunch bowl just be sure to include: ⠀⁣
💫 a carb e.g. noodles/pasta/rice/quinoa/pumpkin/potato etc⠀⁣
💫 protein e.g. tofu/tempeh/beans/lentils or eggs/fish if you include them ⠀⁣
💫 good quality fats e.g. avocado/hummus/nuts and seeds⠀⁣
💫 then load up on veg, remember more colours = a greater variety nutrients, so aim for rainbow 🌈⠀⁣

As part of my food prep I whipped up a batch of hummus with @bionaorganic chickpeas + lemon juice and this cashew dip (ingredients below) which I could add to lunch bowls/spread on toast throughout the week. A little prep goes a long way – make it easy for yourself 💕 ⠀⁣

Tofu + onions fried with curry powder and smoked paprika ⠀⁣
Brown rice noodles ⠀⁣
Rocket and fresh toms 🍅⠀⁣
Homemade hummus ⠀⁣
Homemade turmeric cashew + black pepper dip (made using soaked cashews, @d8_made black pepper date paste, nutritional yeast, @wunderworkshop ground turmeric and apple cider vinegar)⠀⁣
@hurlyburlyfoods lemon + ginger sauerkraut ⠀⁣
