Brocolli and cashew stir fry. Easy and healthy ?
I’ve cooked without oil here. So the recipe is using water to cook with but if you can’t get to grips without using oil, feel free to use as you normally would. I just tend to not use if its not needed.
This is the full recipe from my blog as I have taken a major pause on it until I move, cut down hairdressing and can focus on growing my own and making lots of new recipes. Very exciting new changes happening in the new year ?

Recipe
?1 medium broccoli chopped stalk and all (about 250g)
?1/2 diced yellow onion
1 cup cashews
?3 cloves garlic minced
1 tsp fresh chopped ginger
?chopped red chilli optional

Sauce?
2 tbsp soya sauce
1 tbsp shoaxing wine
1 clove garlic minced
1 tsp corn flour
1/2 lemon juice (about a tbsp)
2 tbsp water

In a small bowl whisk soya sauce, Shaoxing wine, lemon juice, 1 clove of minced garlic, water and cornflour.
Heat pan on medium heat and add onions with a tbsp of water and sauté until almost translucent. Add cashews and fry for 5minutes softening the nuts. Add the garlic, ginger and chilli and sauté for another minute or 2. Adding a tbsp of water if the bottom dries out.
Add broccoli to pan and cook for another 5minutes stirring occasionally , adding another tbsp of water if needed.
Pour in sauce and cook for 2-3 minutes stirring frequently
Serve with rice or noods
