Breakfast Oat Gem cookies ?

Cookies are a timeless classic. They are a quick treat to whip up in 20 mins or less. Minor downfall , they generally have a high fat and sugar content which is probably why ya just can’t have one cookie ??‍♀️ and that’s ok occasionally

But I wanted cookies for breakfast or maybe a mid snack that doesn’t make me feel brain foggy & “hangry”, yes an Irritated unsatisfied hunger ( psst sugar crash is the culprit here)

As a dietitian, I’m a stickler for numbers when I make a recipe , though you shouldn’t be ( you can dm for macros if that’s you’re kind of thing) but rest assured with a bit of nutrition magic these cookies managed to get so close the real thing minus the downfalls

So here it it ( check notes below for tips)

Ingredients :
3/4 cup + 4 tbsp of porridge oats*
1/2 cup oat flour
2/3 cup of almond flour
1/3 date or coconut sugar
1 tsp psyllium husk *
1 scant tsp baking soda
1 tbsp ACV
1/3 cup runny nut/seed butter of choice*
1/3 cup of Apple sauce
13-14 hu kitchen baking gems*

1- preheat oven to 180 C
1- In a big bowl , add all your dry ingredients except the baking soda
3- In small bowl whisk together all your wet ingredients + baking soda
4- Gradually fold your wet ingredients into dry, let chill in the fridge for 30 mins*
5- On a lined baking sheet, scoop dough & flatten slightly, adding one Hu gem or chocolate chunk in the middle
6-Bake for 12-15 mins
Notes: *The mixed blending of oats gives these cookies a great texture. Lightly blend your 1 cup of porridge oats for a few seconds & keep the 4 tbsp unblended
*if you don’t have psyllium husk sub for 1 tbsp of starch ( corn , arrowroot , tapioca )
*Tested these with macadamia butter & tahini ? *chilling is a must here as the dough will feel wet , but I always cheat & place in the freezer for 15 mins and it still works ?
