To make the tofu, I simply coated it in cornstarch and then fried in some sesame oil until golden brown and crispy (around 10 minutes in total), making sure to rotate it every few minutes. At the last minute, I added a splash of tamari and stirred everything together.

For the pasta, I cooked some gluten-free penne and while it was cooking I sautéed red onion and garlic for a couple of minutes until fragrant. I then added 1/2 cup oat milk, 1/4 cup water, 1 tbsp tahini, 2 tbsp nutritional yeast, 1/2 tsp sea salt and the juice of 1/2 lemon. When the pasta was cooked, I drained and rinsed it and transferred to the frying pan to combine with the sauce. It was really flavourful and super cosy too!
