Borlotti bean stew

Ingredients (for 2 servings):
* 1 can of borlotti beans
* 1/2 red onion
* 1 carrot
* 1/2 sweet potato
* 1 tsp vegetable stock powder
* 4-5 tbs tomato sauce
* 3-4 bay leaves
* spices: pinch of salt and pepper, 1 tsp paprika, 1 tbs curry, 1 tsp of Provence herbs

Recipe:
1. In a large frying pan, add the onion and cook it until tender. (Obs. You can use oil or butter for this step.)
2. Add the spices and cook for 1 minute.
3. Add the beans, the carrot in cubes and the sweet potato in cubes and the tomato sauce. Simmer for 10-15 mins.
4. Add the bay leaves and let everything cook for 5 more minutes.
5. Serve topped with more spicew and enjoy with pickles, sunny-side-eggs or your non-vegetarian option!
