Blueberry Loaf 💙💙⠀

Ingredients:⠀

Loaf:⠀
1/2 cup cashew blueberry acai yogurt⠀
3/4 cup soy milk⠀
1/4 cup passionfruit pulp⠀
1/4 cup extra virgin olive oil⠀
2 tsp vanilla extract⠀
2 cups plain self-raising flour⠀
1 cup white sugar⠀
1/4 cup desiccated coconut⠀
1/2 tsp sea salt⠀
1.5 cups fresh or frozen blueberries⠀

Glaze:⠀
1 tub (250g) vegan cream cheese⠀
1 tsp vanilla extract⠀
2 tsp lemon juice⠀
1/2-3/4 cup icing sugar, to taste⠀

Method:⠀
1. Preheat the oven to 180*C/360F. Grease and line a loaf pan and set aside.⠀
2. In a large bowl, combine the yogurt, milk, passionfruit pulp, olive oil, and vanilla extract. Mix well.⠀
3. Add in the flour, sugar, coconut, and sea salt. Gently fold through the blueberries.⠀
4. Transfer into the loaf pan, then place into the oven and bake for 55 minutes until golden and cooked through.⠀
5. Remove from oven and transfer to a cooling rack. Sit at room temperature until cooled down.⠀
6. In the meantime, combine the glaze ingredients into a bowl and beat until smooth. Place into the fridge to chill (especially if it’s too runny).⠀
7. When ready, spoon glaze on top of your cooled loaf and decorate with fresh blueberries, fresh passionfruit, and mint. Slice into even pieces and enjoy! Store in an airtight container in the fridge for up to 5 days. Enjoy!⠀
