BLUEBERRY BUCKLE✨



a quick and easy sweet treat that can be enjoyed any time of the day

R E C I P E
Ingredients:
2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/4 cup oil
1 large egg
1 cup sugar
1 tsp. vanilla extract
3/4 cup milk
2 cups fresh blueberries

Crumb Topping:
1/3 cup of sugar
1/2 cup all-purpose flour
1 tsp cinnamon
4 tbsp salted butter

I N S T R U C T I O N S
*Preheat oven to 375F degrees
1. In a mixing bowl, combine flour, baking powder and salt and set aside
2. Using a stand mixer, beat the oil, egg, sugar and vanilla extract together
3. Alternate mixing in the flour mixture and the milk (end with the flour mixture)
4. Fold in the blueberries
5. Spray a 9×9 baking dish with nonstick spray and transfer batter into the baking dish
6. For the crumb topping, combine the sugar, flour and cinnamon in a separate bowl
7. Cut the butter into small cubes and add it to the sugar, flour, cinnamon mixture
8. Using a fork, a pastry cutter, or clean hands combine the mixture until it reaches a crumbly state
9. Optional: sprinkle sugar on the top (I used @kingarthurflour Sparkling Sugar)
10. Bake for 45 minutes or until an inserted toothpick comes out clean
