Recipe:
(serves 8-12)⠀⠀
Ingredients:⠀⠀
Base:⠀⠀
– 200g almonds⠀⠀
– 100g pistachios⠀⠀
– 5 medjoul dates⠀⠀
– 2 tbsp melted coconut oil⠀⠀
– 2 tbsp almond butter⠀⠀
– 2 tsp matcha powder⠀⠀
– 0.5 tsp vanilla bean paste⠀⠀
Lemon Filling:⠀⠀
– 100g cashews⠀⠀
– Juice of 1 lemon⠀⠀
– 1 tsp lemon extract⠀⠀
– 1/4 cup maple syrup⠀⠀
– 1 tsp vanilla bean powder or paste⠀⠀
– 1/2 can of coconut milk (the hard part from the top)⠀⠀
– 1/2 cup melted coconut butter⠀⠀
– A handful of loose fresh balckberries⠀⠀
Blackberry Filling:⠀⠀
100g cashews⠀⠀
– Juice of 1 lemon⠀⠀
– 1/4 cup maple syrup⠀⠀
– 1 tsp vanilla bean powder or paste⠀⠀
– 1/2 can of coconut milk (the hard part from the top)⠀⠀
– 1/2 cup melted coconut butter⠀⠀
– 1 cup blackberries⠀⠀
– 2 tsp acai powder⠀⠀
Garnish:⠀⠀
– Some ground pistachios⠀⠀
– Some fresh blackberries⠀⠀
⠀⠀
Method:⠀⠀
Base:⠀⠀
– In a high speed food processor, blend the almonds and pistachios until finely ground⠀⠀
– Add the remaining ingredients and blend until they form a dough.⠀⠀
– Press the dough evenly into a dish of your choice (baking dish/ cake tin lined with parchment or a sillicone cake mould)- approx 8 X 8″⠀⠀
Lemon filling:⠀⠀
– Combine all your ingredients in your blender and blend until completely smooth and creamy.⠀⠀
– Pour the mixture on top of the base.⠀⠀
– Add some whole fresh blackberries, spread them out unevenly throughout the cheesecake mixture.⠀⠀
– Place the cake into the freezer to set for a minimum of 1/2 an hour.⠀⠀
Blackberry Filling⠀⠀
– Blend all the ingredients until smooth and creamy.⠀⠀
– Remove the cake from the freezer and pour the blackberry mixture on top.⠀⠀
– Place the cake back in the freezer to set (minimum 2 hours but preferably overnight)⠀⠀
– Once the cake has set completely, remove from the baking dish.⠀⠀
– Carefully turn the cake upside down and cut gently with a very sharp knife (with the crust part facing upwards to prevent crumbling)⠀⠀
– Garnish the slices with pistachios and fresh blackberries.⠀⠀
– Store in the freezer and remove about 1 hour before serving. Enjoy!
