Black Beans and Spicy Sausage!
A hearty and spicy slow cooker black bean recipe that can also be made on the stove top! The addition of vegan chorizo not only gives this dish a kick but also turns it into a well-rounded meal. Black beans and spicy sausage goes really well with the avocado and cauliflower rice! Plus this recipe makes a ton, so it’s a good dish to make if you won’t have a lot of time to cook and need to plan ahead.

Ingredients:
1 lb dry black beans
4 tsp salt
1/2 tsp ground black pepper
3 tsp garlic powder
3 bay leaves
1 vegan chorizo sausage
1 batch cauliflower rice
1 avocado, sliced

Directions:
Cover the beans in cool water and soak overnight. In the morning, drain and rinse the beans. In a large pot or slow cooker, cover the beans with fresh water. Add the salt, black pepper, garlic powder and bay leaves and bring to a boil. Reduce heat and simmer for approximately 45min, until the beans start to soften. If using the slow cooker, cook on high for 1-2 hours. Add the vegan chorizo and continue to cook for another 30 minutes (or 1 hour in the slow cooker on high), until the beans are soft. Serve over cauliflower rice and
garnish with sliced avocado.
