Biscoff Marble Cake 🌱
Chocolate cake marbled with caramelised Biscoff sponge topped with a dulcet buttercream and sprinkled speculoos crumbles.
A truly heavenly combo ✨
– Combine 2 tbsp flaxseed with 5 tbsp water to make flaxeggs
– Mix 450g light brown caster sugar with 325g plain flour, 2 tsp bicarbonate soda and a pinch of salt together in a bowl
-Make a well and add 120mls veg oil, 1 cup soya milk, 1 cup hot water and your flax eggs and stir until combined
-Split mixture in half
-Add 40g cocoa powder to one half and mix until combined
-To the other half, add 150g melted Biscoff spread and mix until combined
-Spoon/pour mixture, alternating between chocolate and Biscoff batters into lined 2lb loaf tins (this makes 2 loaves)
-Use skewer to mix batters together and form marble effect
– Bake at 180C for ~35mins
-For the icing, combine 150g vegan butter with 300g icing sugar, 209g Biscoff spread and 2-3 tbsp soy milk and beat until creamy
-Spread onto cooled cakes, top with melted Biscoff and crushed biscuits & enjoy!
