Bhindi is one of my favourite vegetables and I make many Bhindi preparation. Bharwan Bhindi is one my my favourite dish and I make it with my own version and it tastes amazingly delicious. Surprisingly I don’t use Besan in my Bharwan Bhindi. To make this dish my way, use below recipe.

Ingredients :

Bhindi 250gm (medium size)
Roasted Peanut 100gm
Grated coconut 100gm
Red chili powder 1tsp
Turmeric powder 1/2 tsp
Chaat masala 1/2 tsp
Amchoor powder 1/2 tsp
Chopped coriander 1 tbsp
Crushed brown onion 1 tbsp
Jaggery powder 1-2 tsp
Salt to taste
Coriander powder 1 tsp
Hing a pinch

Steps:

Wash Bhindi and wipe it. Remove top and bottom part and slit lengthwise from middle. Remove extra seeds and keep it aside.

In a blender add roasted Peanut and coarsely grind it. Take out in a mixing bowl. Add all the above ingredients in the bowl and mix it properly. Check for seasoning.

Stuff each bhindi with this mixture. Put oil in a pan and then add the stuffed bhindi. Cover it with a lid cook it gently from all the sides.

(you can bake this bhindi as well. Just brush little oil on each bhindi and put in baking tray. Bake for 8 to 10 minutes at 190°C).

Serve with any indian bread or just rice and dal.
