Before summer ends☀️, you gotta try this Gazpacho with tomato🍅 and watermelon🍉!⁣⁣

Ingredients for 4-8 servings: ⁠ ⠀⁣⁣
✔️1 kg of tomatoes🍅, peeled ⠀⁣⁣
✔️3 medium garlic cloves⁠ ⠀⁣⁣
✔️3 stalks of celery⁠ ⠀⁣⁣
✔️1/2 small onion (preferably red onion) ⁠ ⠀⁣⁣
✔️200-300 g watermelon🍉, without peel and seeds⁣⁣
✔️1/2 pitted chillies (leave out if you don’t like spice!)⁣⁣
✔️50g white bread🍞⁣⁣
✔️80ml tomato passata or tomato juice⁠ ⠀⁣⁣
✔️1-1.5 Tbsp red wine vinegar⁠ ⠀⁣⁣
✔️50ml olive oil⁠ ⠀⁣⁣
✔ handful of basil leaves⁠ 🌿⠀⁣⁣
✔️a large pinch of salt and freshly ground pepper⁠ ⠀⁣⁣

Ingredients:⁣⁣
⁣⁣
1. Roughly chop the tomatoes🍅 and put them into a large bowl. Peel and chop the garlic. Cut the onion, celery and watermelon🍉 into pieces. Put everything in a bowl with the tomatoes. If the watermelon is not very sweet, I suggest adding more – 300 g, if it is very sweet – 200 g. ⁠⠀⁣⁣

2. Add chopped chilli pepper🌶, bread pulp, tomato passata or tomato juice, wine vinegar, olive oil and basil leaves🌿 to the ingredients. Season generously with salt and pepper. ⠀⁣⁣
⁣⁣
3. Blend the gazpacho into a smooth cream using a blender (hand blender preferred if you have one). Taste and add wine vinegar, salt or pepper to suite your preference😋. Put the finished gazpacho in the fridge to ❄️ for at least 3 hours. ⁠⠀⁣⁣
⁣⁣
4. Serve cold, sprinkled with olive oil and garnished with cherry tomatoes🍅, slices of green chilli💚 (can be omitted if you don’t like spicy) and basil leaves🌿. ⁠⠀⁣⁣
