🥕Beetroot Hummus with Roasted Carrots🥕

I’m moving apartments these days (yey, I get a real oven🎉), so not a lot of time for cooking! Anyways, here’s a really nice little beetroot hummus dish!

Ingredients:

🌱1 tin of chickpeas. Drained, but save the liquid
🌱Olive oil, start with about 3 tbsp
🌱A squeeze of lemon juice
🌱2 small garlic cloves, chopped
🌱Salt & pepper
🌱2 generous tbsp tahini
🌱1 small beetroot, roasted or boiled

Add everything except for the chickpea liquid in a blender. Blend until smooth then add a bit of liquid and some more olive oil until you have the texture you prefer. Season with salt, pepper and lemon juice. Serve with whatever you like! I served mine with roasted carrots, toasted buckwheat and some endive leaves. Top with some lemon zest, soft herbs and olive oil.
