Beet soup! Loving that colour. Beets are such a beautiful vegetable. Right? This is my first attempt at making beet soup (borscht) – I’m not sure it overly authentic – just what I came up with. Really easy to make and pretty simple ingredients.
Recipe – what I did below….
5 c roasted beets, peeled, 3 c shredded, 2 c diced, set aside
1 c diced celery
2 c shredded carrots
1.5 c shredded red cabbage
1 T minced ginger
2 garlic smashed and minced
6- 8 c veggie broth
2 c diced russet potatoes
The roasted beets
Cook till potatoes cooked
Juice one lemon
1 T Balsamic vineg
1/2 c Sour cream with -1 t flour, mix add a bit of broth, stir then add to back to soup to thicken
Add 1/2 c chopped dill at end, save a bit for the garnish
Salt and pepper to taste
Garnish with sour cream and more dill
