I’m dying over how amazing and gorgeous these look. They’re perfect for a yummy sweet treat!💚
• 134 cups All Purpose Flour
• 1/2 cup Almond Flour
• 21/2 tsps. Baking Powder
• 1/4 tsps. Baking Soda
• 1/2 tsps. Sea Salt
• 1/2 cup Cane Sugar
• 1 cup Almond Milk
• 1 tsps Apple Cider Vinegar
• 1/3 cup Coconut Oil
• 2tbsp. Lemon Zest
• 3 tbsps. Lemon Juice
• 1 tsps. Pure Vanilla Extract
• 1/2 cup vegan butter, softened
• 1/2 tsp vanilla extract
• 1 ½ – 2 cups sifted powdered sugar
• 2-4 tbsp blue spirulina powder
• 1/2 tsp almond milk
1. Preheat the oven to 375°F. Lightly grease a 12-cup non-stick muffin tin with oil.
2. Combine milk and vinegar in a small bowl. Set aside.
3. Sift and mix the dry ingredients (except zest) in a large bowl.
4. Use a medium bowl to whisk the remaining ingredients.
5. Pour the almond milk mixture.
6. Mix the wet ingredients with the dry ones in the larger bowl. Whisk the batter turns silky smooth.
7. Pour/scoop batter into the muffin tin.
8. Bake for 16-17 min (or if the toothpick comes out clean).
9. Cool for 10 mins in the pan before transferring it to a wire rack.
10. Frost with blue icing or leave it bare. Enjoy! 💙
