💥BEANS ON TOAST 🌱😋 this literally took 10 minutes to throw together🙌perfect for a quick mid week lunch or dinner. Beans and legumes are some of the most underrated foods on the planet. They are an excellent source of dietary fiber, protein, B vitamins and many other important vitamins and minerals💥
1 Tin haricot beans
1 large clove garlic
2 spring onions
1/2 a tube of tomato purée
1 tsp vegan Swiss bouillon or other veg stock
Large handful spinach
Salt and pepper
Finely chop the spring onion and crush the garlic.
Place both in a pan with a splash of olive oil – sauté gently for 2 minutes, ensuring it doesn’t start to brown.
Drain, rinse and add the beans to the pan along with half a tube of tomato purée and roughly 100ml water.
Mix well, adding more water until you get your desired consistency.
When the mixture is bubbling gently, add the veg stock, salt and pepper and leave to simmer gently for 5mins.
Add a big handful of spinach and mix until the spinach has wilted.
Serve on your favourite toast with lots of creamy avocado 🥑🤤🌱🙌
