Bbq Cauliflower Steak
& Chimichurri sauce

Vegetarians and vegans rejoice this is such a yummy and great dish to prepare.
I seem to be using cauliflower a lot more in recent months but it’s so versatile.

The Chimichurri sauce is something that I’m also using a lot I make in batches and store in the fridge to add to anything I feel like delicious.

1 small head cauliflower

CHIMICHURRI

2 cups packed fresh parsley
4 cloves garlic crushed
1 red onion
1 red chilli pepper finely diced
the juice from 1/2 lemon
1/4 cup red wine vinegar
2/3 cups of rapeseed oil ( you can use olive oil but I mostly use rapeseed to do all my cooking and sauces)
1/4 tsp salt
2 tbsp fresh oregano

Once you’ve chopped up all the Chimichurri ingredients.
place in a bowl and add oil and lemon and salt stir well.
Taste to see if you need more salt and add more oil if you want of need to.

To cut the cauliflower steaks, remove the leaves from the base of the cauliflower and cut the cauliflower into steaks be sure to get a portion of the core in each one as this will hold them together.

Brush the top side of each cauliflower with a spoonful of the chimichurri sauce and then place the steaks oiled side down your grill. I used @jean.patrique whatever pan Close the lid and let the steaks cook for 5 minutes. Brush the top sides of each steak with chimichurri sauce before flipping them over and grilling for another 5 minutes. The steaks should be tender with darkened grill marks on both sides.
Serve the cauliflower with the chimichurri evenly spread on top.
