Banana muffins 🍌
A healthy little snack 🌱
⬇️Recipe below⬇️
1 cup plain flour
1/2 cup wholemeal plain flour
2 tbs maca powder (optional)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 large ripe bananas
6 Tablespoons applesauce or apple puree,
2/3 cup panela sugar or dark brown sugar (or coconut sugar)
1 large flaxegg
1 teaspoon vanilla extract
3 Tablespoons milk
12 vegan chocolate freckles
You could also mix through the batter chopped dark chocolate or nuts

Preheat oven to 220degrees. Lightly Spray a muffin pan with nonstick spray or use cupcake liners.
Mash banana and prepare flaxegg and set aside.
In a large bowl wisk together the flours, spices, salt and maca powder.
In a separate bowl wisk the bananas, flaxegg, milk, sugar, vanilla and applesauce together until well combined. Add the wet ingredients to the flour mixture and whisk until it comes together. Spoon mixture into muffin tin and place a freckle on top of each muffin. Place into the oven for 5mins and then reduce the heat to 180degrees for another 16-18mins or until a skewer inserted comes out clean. Leave muffins in tin for 5mins and then transfer to a wire rack to cool. Store in a air tight container for a week.
