Banana French toasts!! Definitely one of my favourite breakfast recipes to make now. They are so so yummy but the only thing I would have changed was to use another type of bread instead of the sandwhich style bread. Other than that, everything is so yummy!! I totally missed this brekkie 😋
• 2 slices of rustic/artisan bread
• 1/2 banana
• 1/4 cup plant-based milk
• 1/2 tbsp flaxseed
• 1/4 tsp cinnamon
• banana coins
• maple syrup/ honey
1. Start by smashing the banana until a super smooth consistency (best if there are no chunks. Do use blender if necessary)
2. Add soy milk, flaxseed, cinnamon into mashed banana mixture and let it sit for 5 minutes.
3. Meanwhile, heat the pan on low heat. Add vegan butter or neutral tasting oil and add coated bread into the pan. Fry on both sides until golden brown and serve with desired toppings.
