BANANA – CARROT PANCAKES

From the BASIC INGREDIENTS series
๐Ÿฝ๏ธ 8 pieces

1 banana
1 carrot
1 pckg. = 12 g baking powder
110 g plain flour
250-300 ml plant based milk
2 tablespoons coconut / vegetable oil
1 tablespoon of ground flax seeds
2 tablespoons sugar – optional
Oil for frying
Peel of 1 lemon
Pieces of chocolate
Pinch of salt
Optional: soy yogurt / blueberries / strawberries / jam

1. In a deep bowl, mix flour, baking powder, salt and sugar.
2. Finely grate the carrots.
3. Grate the peel of a well-washed lemon.
4. Mix the oil, sugar, flaxseed, banana and plant based milk together.
5. Gradually mix this mixture with the dry ingredients.
6. Add carrots, lemon peel and pieces of chocolate.
7. If the dough seems thin, add plant milk, if it is too thick, add flour.
8. Preheat the pan smeared with a little oil.
9. Gradually fry the pancakes in the pan.
10. Serve with jam, fruit or soy yogurt.
