BANANA BLENDER PANCAKES (vegan, high-protein) ⁣
⁣
Makes: 4-5 large pancakes⁣
INGREDIENTS:⁣
✅1 1/2 cup oats ( should make ~1 3/4 cup oat flour)⁣
✅3 tablespoons vegan vanilla protein powder⁣
✅2 tablespoons coconut sugar ⁣
✅2 teapsoons baking powder ⁣
✅1 teaspoon ground cinnamon ⁣
✅3/4 cup almond milk ⁣
✅1 large ripe banana⁣
*optional: vanilla essence⁣
⁣
✅Coconut oil for cooking ⁣
⁣
METHOD:⁣
1. Add the oats to your blender and blend until it becomes a fine oat flour⁣
2. Add in all the other ingredients and blend until the batter is thick & smooth⁣
3. Heat a frying pan on medium heat with a bit of oil⁣
4. Pour the pancake mixture into the pan, spread the batter into a circle shape. Cook for 2 minutes on each side until golden. Transfer the pancakes to a serving plate ⁣
5. Decorate the pancakes with your desired toppings! I used maple syrup, peanut butter and berries!⁣
