Baked Vegan Mac ‘n’ Cheese with a Chestnut Crust! 🌱⁣

This baked pasta dish is cheesy, loaded with vegan bacon pieces and topped with a herby sourdough & chestnut crust.⁣

🌰 @merchantgourmet roasted chestnuts⁣
🥓 This Isn’t Bacon⁣

🌿Sourdough & Chestnut Crust⁣
80g sourdough bread⁣
80g roasted chestnuts⁣
2 tsp dried mixed herbs⁣
1 tsp onion granules⁣
½ tsp salt⁣

🌿Mac & Cheese Sauce⁣
500g dried macaroni pasta⁣
1 pack This Isn’t Bacon, chopped & fried⁣
½ cup + 1tbsp vegan butter⁣
½ cup flour⁣
4 cups plant milk⁣
150g vegan cheese, grated⁣
2 tbsp nutritional yeast⁣
1 tsp mustard powder⁣
2 tsp onion granules⁣
2 tsp garlic granules⁣
½ tsp salt⁣

1. Put all of the sourdough & chestnut crust ingredients into a food processor and pulse to form breadcrumbs.⁣

1. Boil the macaroni for 9 minutes. Drain, rinse under cold water & drain again. Stir 1 tbsp of the butter into the pasta to coat.⁣

2. Melt ½ cup of butter in a saucepan. Remove the pan from the heat & whisk in the flour until smooth.⁣

3. Whisk in the nutritional yeast, mustard powder, garlic granules, onion granules & salt.⁣

4. Gradually add the milk, whisking until all the milk is added.⁣

5. Return the pan to the hob and heat until thickened, whisking continuously.⁣

6. Stir in the grated cheese, bacon & macaroni. Transfer to an oven proof dish, top with the herby crust and bake for 25 minutes at 175C.⁣
