BAKED SMASHED POTATOES with lemon, tahini and herbs

Recipe:

Prep: 5 mins
Cook: 45 mins
Ingredients: 1 pound baby yukon gold or red potatoes, 1 tbsp olive oil, 1/2 tsp salt, 1 tsp garlic powder, 1 lemon, 2-3 tbsp sesame tahini, fresh herbs to your liking and 1/2 chopped red onion
1. Boil potatoes for 15 minutes Then drain well
2. Toss with oil, salt and garlic powder.
3. Put on a sheet pan and Bake at 420 for 20 Mins, flip halfway then smash with the back of a spoon and bake 10 more for ultimate crispy
4. Drizzle tahini, squeeze a lemon, sprinkle herbs and onion and DEVOUR.
These taters are amazing as leftovers too. Chop them up add some vegan mayo and some more herbs and you have the most decadent and flavorful chilled potato salad you have ever tasted. Perfect for a picnic!
