BAKED GARLIC POTATOES WITH FRIED PARSLEY MUSHROOMS ⠀

Ingredients:⠀

Potatoes:⠀
1 kg potatoes, peeled and cubed ⠀
3 garlic cloves, minced ⠀
1 tsp dried oregano ⠀
1 tsp chilli powder ⠀
1/2 tsp salt ⠀

Mushrooms:⠀
8-10 mushrooms, sliced ⠀
1 brown onion, finely sliced ⠀
3/4 cup parsley, chopped ⠀
1 garlic clove, minced⠀
1 tsp ground cumin ⠀
1 tsp chilli powder ⠀
1/4 tsp salt ⠀

Instructions:⠀

Preheat the oven to 400/200C. Line a baking sheet with parchment paper.⠀⠀

Place the cubed potatoes into a big bowl and add the garlic, oregano, chilli powder and salt and give it a good mix. Place the potatoes in the oven for about 35-45 minutes until golden.⠀

Place a large pan onto medium heat, add the onions and fry for few minutes until caramelised. Now add the garlic and mushrooms and fry for another few minutes, then add the chilli powder, cumin, salt and parsley. Give it a quick stir and let it simmer for couple minutes.⠀

You can serve it with a salad or eat it as it is, both delicious.⠀
