Baked Falafel lettuce wraps! Yumm!! One of my faves πŸ’šπŸ₯¬πŸ’š
Middle Eastern food is probably one of the best foods in the planet, so it’s only natural I’d crave Falafel. (The fact that I’m Israeli helps too).
So good, so filling, and so healthy!
》 Recipe
* Know this will make about 60 falafel discs, so feel free to downsize (or up-size).Β 
β€’ 250 grams of chickpeas – soaked in water overnight (at least 12 hours), washed and drained. Or 1 Can.
β€’ 250 grams of lentils – same instructions as chickpeas.
β€’ 1 Cup Quinoa – cooked.
β€’ Bundle of fresh Parsley
β€’Bundle of fresh Coriander
β€’ 1 big onion
β€’ 8 Garlic cloves
β€’ 1/4 hot pepper (not mandatory)
β€’1/4 cup water (start with less, you can always add)
β€’ 1.5 tbsp ground cumin
β€’ 2 tbsp sesame seeds
β€’ 1 tbsp ground dried coriander
β€’ 1 tbsp salt (or to taste)
β€’ small tea spoon of baking soda.
Mix everything together in a food processor except for the cooked Quinoa and baking soda.
Take mix out of the food processorΒ and add the Quinoa.
Mix well and put in the fridge to β€œrest” for at least 30 minutes.
Add the baking soda and mix well.
Make Falafel β€œdiscs”.
Preheat oven to 200 degrees (400 F) and cook for 30 mins or until golden brown.
