Baked Aloo Gobhi Baked Potatoes and Cauliflower

Do you want to enjoy the amazingly cooked bites of potatoes and cauliflower in Indian spices? I have added small tomato tadka for extensive flavor.

Ingredients
2 cups cubed golden potatoes
1 tsp oil
½ cup of chopped tomatoes
½ tsp cumin
½ tsp of finely chopped ginger
1 tsp of finely chopped garlic
1/2 tsp turmeric
1/2 tsp red chili powder
1/2 tsp dry mango powder
1/2 tsp cilantro powder
2/3 tsp salt or to taste
For garnish: cilantro and lemon juice

Recipe
Preheat the oven at 400 degree

Line a baking tray with parchment paper and Chop the cauliflower into small florets, potatoes into small cubes

Sprinkle all spices with oil and toss to coat.

Bake at 400 deg F (204 C) for 20 mins, check the texture, and add another 15 mins or until tender to preference.

Until things are baking, add oil to a pan, add cumin, ginger, garlic with all the Indian spices, add chopped tomatoes and let it cook until tomatoes are cooked.

Now add the baked cauliflower and potatoes in the tomato tadka

Taste careful and adjust salt and spice and mix in, To serve garnish with cilantro and some lemon juice.
