Try making these super easy and delicious falafels to add to a sandwich or salad. You’ll be surprised just how easy they are!

Ingredients (makes around 10-11 medium sized falafels)
1 can of chickpeas (washed and dried thoroughly – drying is important!)
1/2 white onion (roughly chopped)
1 large clove of garlic or 2 if they are smaller
A small handful of coriander (roughly chopped)
A larger handful of fresh parsley (roughly chopped)
2tbsp all purpose flour
2tbsp sesame seeds
1tsp cumin seeds
1tsp smoked paprika
1/2tsp coriander powder
1/4tsp chilli powder
Salt & black pepper (to taste)
Spray oil or other oil for brushing
Wash and dry chickpeas in a paper towel. (Note – the chickpeas must be completely dry). Later transfer the chickpeas to a blender.
Add all the other ingredients and blend until you have a well combined falafel mixture.
Take some of the mixture into your hands and press slightly to bind the mixture, before rolling it into the palm of your hands to create a ball.
(Note – the mixture will feel moist in your hands but will firm up nicely once baked).
Continue this process until you have used all the mixture, then transfer to a baking tray.
Spray each falafel with oil (or brush with oil if using alternative) and place in a pre-heated oven for 30 minutes (180 degrees) ensuring to turn and oil the falafels half way through cooking time.
