Are you fed up with making the very same vegetables every other day ?
I have always maintained that taste of a vegetable changes with the texture, cutting style and combinations made with the same…. I was so very tired of eating cabbage ?so I decided to change it up and here is my take on the koshambari ?
Ingredients:
1 whole cabbage diced small
1/2 cup moong dal/green gram
1/2 cup green peas
1 onion sliced thinly
1 inch ginger sliced thinly
1 potato cut like thin chips
1/2 a carrot sliced thinly
A couple of green chillies
A few curry leaves
2 tablespoons oil
1 tsp mustard seeds
1 tsp cumin
Salt to taste
A pinch of sugar
1 cup grated coconut
1 tsp lime juice
Method:
Make a tempering of hot oil and put in the mustard seeds, cumin… once the seeds splutter put in the green chillies ginger and curry leaves. Add in the moong dal and fry for a couple of mins before putting in the onions and stir for 5 mins. Next put in all the other vegetables. Keep stir frying for about 15 mins then add in the salt, sugar, coconut and lime juice. Keep the lid on the wok and let it cook for 5 mins and it’s ready to serve ?
