APPLE AND BERRY PIE, NO REFINED SUGAR.
This was my first pie. Literally had no idea what I was doing but it tasted sooooo good!
6 apples, peeled and chopped
2 cups of frozen berries I think – I didn’t measure this properly – sorry!! I used blackberries and blueberries
Sweetener to taste – date syrup, agave, maple syrup
Cinnamon and nutmeg to taste
1 ready rolled shortcrust pastry
Preheat oven to 200°c.
Chop the dates and fry them on a low to medium heat for 1 minute. Then add enough water to cover them and let them simmer until it starts to create a syrup. Mash the dates slightly to help them break up.
Once that is done add the apples and enough water to cover the apples and let them cook until they are soft. Add a sprinkle of cinnamon and a sprinkle of nutmeg at this time too. Stir occasionally.
When you can see the apples aren’t far off from being done add the berries and the sweetener and let the flavours all combine.
At the same time pop the shortcrust pastry into a baking tray (I lined the baking tray with baking paper but actually don’t know if this is necessary ?). Pop the pastry in the oven for 10 minutes. This will allow it to harden a bit so that the apple berry mix doesn’t make it soggy.
After those 10 minutes, get the pastry out of the oven and add the apple berry mix to the centre. Cook for a further 30 minutes, then remove from the oven. We ate it with coconut cream ?❤
