Anyone else feel like we’ve skipped autumn and moved straight to winter?❄ This spiced carrot & red lentil soup (recipe below) made for a much needed warming lunch yesterday – and it’s perfect for batch cooking too! I topped this with yoghurt, mixed seeds and some spicy roasted pumpkin seeds (clearly need to work on my soup decorating skills though oops)?

SPICED CARROT & RED LENTIL SOUP (~2 servings):
• 100g uncooked red lentils
• 2 carrots, chopped
• 1 can chopped tomatoes
• 1tsp cumin
• 1tsp coriander
• 1/2tsp paprika
• 1/2tsp turmeric
• 1/2tsp cinnamon
• 100ml water (plus extra for blending)
• 100ml oat milk
> Put all ingredients into a pan, bring to a boil then turn down and simmer for ~30mins, until lentils are cooked
> Blend until smooth, adding warm water until desired consistency is reached (I added ~150ml)
> Divide into bowls & serve!

SPICY ROASTED PUMPKIN SEEDS:
• seeds from one medium pumpkin (I think? what is a normal sized pumpkin??)
• 1tsp smoked paprika
• 1/2tsp cayenne
• pinch black pepper
• 1tsp soy sauce
• 1tsp water
> Preheat oven to 175’C
> Mix everything in a bowl
> Transfer to baking tray and roast for ~15mins, until crispy
