🍠💪Another entry to #EatYourVeggieswithBB is this beautiful creation- Elephant Yam or what we call Sooran or Oal in Hindi.

The elephant foot yam is a good source of minerals that can supply a large portion of the daily requirements of minerals in food.🍠🧘‍♂️🧘‍♀️

🌻Peel and dice the sooran into cubes and boil them in roaring water with 1/2 tspn of salt and turmeric.
.
🌻Once the yam is semi-boiled, drain the water and saute the cubes in 2 tspn mustard oil. You could directly saute in oil as well, that would require more oil ofcourse!
.
🌻Now to make it healthier- we will make the masala in cooker without OIL! Yep, you heard it right!
.
🌻In a cooker, add you onions, tomatoes, garlic, ginger, coriander seed, black pepper corns and cumin seeds. Pressure cook this for two whistles after adding 1/4th cup water(If your tomatoes are juicy, you may skip water.)

🌻 Now puree this masala. In another pan, add 2 tspn mustard oil and add the puree. Add 1/2 tspns turmeric powder and red chilly powder. Adjust salt. Since the masala is already cooked, you just need to fry it for 5 minutes till it releases oil.

🌻 Add the sauted yams and the garam masala powder at this stage. Cook it for 10 more minutes

🌻 Garnish with coriander leaves and enjoy with rotis!! Healthy, time saving and delicious!
