What you’ll need:
400g pumpkin
1 potato
1/2 carrot
50g cashews
1 pck soy creme
Veggie broth
Herbs and spices

Instructions:
Cut the pumpik into cubes, lightly oil and season it with salt, garlic and rosemary and bake it in the oven at 180C for about 30min. Meanwhile, peel and cut the carrot and potato, boil it together with the cashews until soft. Then blitz all the ingredients together. But save some pumpkin pieces for later. Gradually add veggie broth to the mix until you get your desired creaminess. Season with salt, pepper, garlic, nutmeg, turmeric and rosemary.
Boil some wholewheat spaghetti, drain the water and mix in the pumpkin sauce. Serve with pumpkin pieces and enjoy 😊
