In Frame: Kadhai Tofu
: Tofu Curry
Kadhai Tofu is my take on the famous Kadhai Paneer. I had some tofu lying in my refrigerator so decided to give this a go, and it turned out just as delicious as I envisioned it to be!
~ Tofu (250gms), sliced into equal sized squares
~ 1 large red onion,cut half into large squares and half roughly chopped
~ 3 garlic cloves
~ 2 tsp ginger
~1 green chilli
~ 1 large tomato, roughly chopped
~ 2 large green bell peppers chopped into large squares.
~1/4 cup Fresh Cilantro
~ 1/2 cup water
~ Salt, to taste
~ 1 Tsp coriander powder
~ 1 Tsp red chilli powder
~ 1 Tsp garam masala
~ 3 Tsp olive oil
~ Heat 1 Tsp olive oil in a pan on high heat, add in the onion squares and bell-peppers. Saute for 3-4 mins until onions are translucent. Transfer to a bowl.
~ In the same pan, add 1 Tsp olive oil, add in the tofu squares and cook until golden brown on both sides. Transfer to a bowl.
~ Again using the same pan, add In 1 Tsp olive oil, to it add the rest of the ginger, garlic, green chilli and onion and sauté for 3-4 mins on high heat. Add in the tomatoes and cook for 7-8 mins until tomatoes are well cooked. Transfer to a food processor, and blend to a paste once it is slightly cool.
~ Add the paste to the pan, and add in the spices, the red chilli powder, coriander powder, salt and garam masala and cook for 5-6 mins until fragrant. Add in the water and cook on low heat for 5 mins. Now add the tofu and the veggies and let’s the flavours infuse for another 6-7 mins on low heat.
~ Serve hot with rice or bread of choice Naan / Roti 🥞🍛
