Although my meals are usually very simple, and I tend to not really think of them as “real” recipes, I’m going to try to share more details on the meals I make! What do you think, will that be useful for you? πŸ€”

Anyway, here’s maybe not the prettiest meal but it’s VERY easy and delicious: Szechuan Tempeh Stir Fry

*Makes 3 Servings*

Ingredients:
– 1 8oz package plain tempeh
– 1 eggplant, chopped
– 1/2 bunch asparagus, chopped
– 3 tbsp oil
– 1 tbsp minced garlic
– 1/4 tsp red pepper flakes (or to taste, add more if you like πŸ”₯)
– 1/3 cup low sodium vegetable broth
– 1/3 cup hoisin sauce
– 2 1/4 cups cooked brown rice

Directions:
– Heat oil in pan on medium high
– Add tempeh, chopped eggplant and asparagus and saute until vegetables are very tender and tempeh is beginning to brown, around 10 minutes
– Add garlic and red pepper flakes and cook until fragrant, under one minute
– Add vegetable broth and hoisin sauce and stir to cover all ingredients
– Bring to a simmer and let them cook for about 2 more minutes
– Remove from heat and serve with 3/4 cup brown rice
– Optional: Top with green onion or sesame seeds
