Almond Coconut White Chocolate Fudge Cups
What a mouthful of a name but I literally don’t know what else to call these haha! These yummy little cups have a coconut shortbread base, and topped with an almond butter white chocolate fudge. I made these using @hempfoodsaustralia new Almond Chia Hemp Butter. These little treats are yummy bites of rich goodness that you need to try!
For the Base:
▪️45g Coconut Flour
▪️20g Vanilla Protein Powder (@macr0mike)
▪️20g Brown Rice Syrup
▪️10g Coconut Oil (melted)
For the Fudge
▪️70g @hempfoodsaustralia Almond Chia Hemp Butter
▪️50g Dairy Free White Chocolate
▪️15g Brown Rice Syrup
▪️10g Coconut Oil
1. Mix base ingredients together and press into silicone moulds. Put in the fridge to set.
2. Add fudge ingredients to a microwave safe bowl and microwave for 30 seconds intervals until chocolate has melted and all ingredients are combined.
3. Pour over bases and leave in the fridge for a few hours to set.
4. Store in the fridge for a week or the freezer for longer.
*I topped mine with drizzle of white chocolate, coconut flakes and some left over crumb from the base.
