All You Need is Love!⚘

‘Love Actually’ es mi pelicula favorita. He preparado un plato panqueques calabaza con coulis de maracuyá.
Today’s post is inspired by my favourite movie, ‘Love Actually’ – we all need a little more love especially now. It’s a funny, sad, moving, heart warming film which is a ‘must watch’ at Christmas time. I have paired my heart shaped pumpkin and coconut pancakes with a passion fruit coulis to symbolize love and marriage with passion fruit half ‘wedding rings’.
Makes 8 heart shaped pancakes:
150g spelt flour
1 1/2 tsp baking powder
1 tsp baking soda
Zest and juice of 1 small orange
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
1/4 tsp all-spice
60g pumpkin puree
1 Tblsp maple syrup
250ml unsweetened almond milk
1/2 Tblsp coconut oil
Mix all dry ingredients in a large bowl.
Whisk pumpkin puree, orange juice, syrup and almond milk together until smooth.
Make a well in the centre of the flour, gradually whisk in the wet mixture.
Heat a frying pan, melt the coconut oil then pour into the pancake batter. Whisk and rest for a few minutes.
Brush pan with a little more oil and ladle batter into a heart shaped cookie cutter. Shake out gently when bubbles appear, then flip to cook the other side. Cook one at a time.
For the coulis:
6 ripe passion fruit, halved and pulp scooped out
1/4 cup golden caster sugar
2 Tblsp water
Whisk pulp, sugar and water together in a small saucepan. Simmer until thickened slightly.
Drizzle over pancakes, then top with dessicated coconut.
