African Chickpea and Peanut Stew with Kale

Ingredients:
2 tbsp neutral oil
3 x 400g chickpeas, drained
1 large onion, chopped
4 cloves garlic, crushed
1 1/2 tsp salt
1 tsp pepper
2 tsp Cajun spices
1 tsp paprika
1 tsp cumin
1/2 tsp chilli powder
1 x 400g tin of tomatoes and 1 x 400 tin of coconut milk
1 cup of peanut butter
1 red bell pepper, chopped
150g kale
Peanuts and Padron peppers to garnish

Method:
1. Fry the onion and garlic in the oil for 5 mins.
2. Add the salt, pepper, Cajun spices, paprika, cumin, chilli powder and red pepper and cook for a further 5 mins.
3. Add the chickpeas, tomatoes, coconut milk and peanut butter, stir well and bring to the boil, then reduce to a simmer and cook for 30 mins on a low / medium heat.
4. Add the kale and cook for a further 10 mins.
