guess what? oats aren’t just for breakfast! @quaker oats can also be part of a wholesome lunch or dinner. these savory oat crepes with mushrooms & spinach *truly* are great for breakfast, lunch, or dinner – we love a versatile dish. 🌿⁠

1 c oat flour (blend @quaker Old Fashioned Oats in a blender)⁠
1/2 c all-purpose flour⁠
2 tbsp ground flax⁠
1 tbsp tapioca or corn starch⁠
1/4 tsp sugar⁠
1/4 tsp salt⁠
2 tbsp olive oil⁠
4 c unsweetened non-dairy milk⁠
8 oz mushrooms, sliced⁠
2 cups spinach, chopped⁠

Heat a skillet to just below medium heat. Grease with nonstick spray.⁠
In a large bowl, add dry ingredients; stir. Add olive oil. While whisking, slowly pour in milk.⁠
Ladle 1/2 c batter into the pan. Cook for 2 minutes, flip (carefully), then cook for 2 minutes.⁠
In a skillet over medium heat, add a little oil. Add mushrooms and spinach; cook until mushrooms are lightly browned, about 7 minutes.
