Here’s how to make it:
You’ll need:
2 slices of FUTURELIFE®️ High Protein Ancient Grain brown bread
1 small aubergine, sliced into 1cm slices
1 tbsp of olive oil and salt to taste
1 red bell pepper
2 slices of vegan mozzarella
3 lettuce leaves
2 tsp of pesto
microgreens of choice
1. Slice your aubergine and place on a paper towel, sprinkle with salt and sent aside for 5 minutes (so that all the water is released).
2. Dry off the excess water and drizzle with some olive oil and grill in a pan over medium to highly heat until soft.
3. Roast the bell pepper on a gas stove top until blacked then place in a ziplockbag for 5 minutes.
4. Peel off the skin and slice.
5. To assemble the sandwich place the lettuce on the bottom slice of bread followed by the aubergine then the sliced mozzarella, micro greens and charred bell pepper.
6. Spread the top slice with pesto and place on top of the sandwich.
7. Enjoy !
