@abiteofvegan_ brings us a delicious grilled aubergine and charred bell pepper sandwich with vegan mozzarella, pesto and fresh lettuce on FUTURELIFE®️ High Protein Ancient Grain brown bread 🥪🍆🥬

Here’s how to make it: ⁣

You’ll need: ⁣
2 slices of FUTURELIFE®️ High Protein Ancient Grain brown bread
1 small aubergine, sliced into 1cm slices ⁣
1 tbsp of olive oil and salt to taste ⁣
1 red bell pepper ⁣
2 slices of vegan mozzarella⁣
3 lettuce leaves ⁣
2 tsp of pesto
microgreens of choice ⁣

1. Slice your aubergine and place on a paper towel, sprinkle with salt and sent aside for 5 minutes (so that all the water is released). ⁣
2. Dry off the excess water and drizzle with some olive oil and grill in a pan over medium to highly heat until soft. ⁣
3. Roast the bell pepper on a gas stove top until blacked then place in a ziplockbag for 5 minutes. ⁣
4. Peel off the skin and slice. ⁣
5. To assemble the sandwich place the lettuce on the bottom slice of bread followed by the aubergine then the sliced mozzarella, micro greens and charred bell pepper. ⁣
6. Spread the top slice with pesto and place on top of the sandwich. ⁣
7. Enjoy ! ⁣
