A delicious and tasty, healthy vegan meal full of good nutritions and easy to make.
Served with brown rice, steamed pak choy and sautéed spinach.
I’ve cooked the rice with the leftover coconut water + water, I had saved from the cake I’ve made yesterday, it gives a great flavour to the rice.

1 firm Tofu
2 Tbsp Miso paste
2 Tbsp soy sauce
2 Tbsp olive oil
1 Tbsp white vinager
2 garlic grinded

Mix all wet ingredients in a small bowl.
Remove tofu from pack, wrap in kitchen towel and press it down with something heavy to remove the excess water for 10-15 minutes.
Cut into cubes of 2cm, put into a bowl and pour the mixture over it, toss to combine. Leave it to marinate for a least 30 minutes.
Heat up a frying pan, add the marinated tofu and cook it for 7-8 minutes.
Serve with your steamed pak choy, sauteed spinach and brown rice. Garnish with extra olive oil and sesame seeds. Enjoy?
