On this board:
Dried figs.
Falafels.
Pistachios.
Artichokes.
Parsley.
Mini pitas.
Lemon slices.
Cherry tomatoes.
Green and purple olives.
Artichoke hearts.
Cucumber slices.

Baba Ganoush:
Ingredients:
Two large eggplants
1/4 cup of tahini
2 tsp of roasted garlic paste.
1 tsp of salt.
1/2 tsp of onion powder.
1/4 cup of lemon juice.
1/3 cup of olive oil.
1/4 tsp of paprika.
1/2 tsp of cumin .

Preheat the oven to 400C. Slice your eggplants in half and then place them face down in a prepared pan. Slip into the oven for 1 hour. Remove from oven, sprinkle some salt on it and leave it to cool down for 5 minutes.
Meanwhile, take all your other ingredients and place them into a bowl.
Using a mesh strainer, scoop out the flesh from the eggplant and discard the skin. Squeeze all the eggplant juice out and place the leftover bits into your bowl with the rest of your ingredients. Using an immersion blender, blend until smooth and creamy!.

Roasted garlic lemon hummus:
In a blender:
? 2 tsp of roasted garlic (I put a dozen heads of garlic in the oven and roast at 400F for 1 hour, squeeze the garlic out- takes awhile but worth it).
? 1 can of chickpeas.
? juice of 1 lemon. .
? 1 tsp of salt.
? 1/4 cup of tahini.
? 1/4 and 2 T of olive oil. .
? 2 T of water. .
? blend in a blender or food processor until smooth and creamy. Take a break to push the mixture down and blend again.
