A warm bowl of soup is all you need during these rainy days 🌧
-1 pound Cremini mushrooms
-1/2 pound wild mushrooms
-1 large onion
-3 garlic cloves
-1 Tbsp Olive oil
-1 Tbsp all purpose flour
-1 Tbsp dried oregano
-2 Tbsp soy sauce
-1/2 cup light cooking cream (optional)
Chop cremini and wild mushroom into small cubes and set aside.
Fry the onion and garlic with olive oil until translucent, then Add the mushrooms and cook them for 10-15 mins until they release their liquid
After 10 mins add 1 Tbsp flour and cook mushrooms until browned.
Cover mushrooms with water or vegetable stock, soy sauce and oregano.
Cover and let it simmer on low heat for 20 mins, until soup thickens.
Using a hand blender, blend soup but keep little pieces of mushroom.
Add 1/2 cup heavy cream, let it simmer for 5 mins.
