🌶️ A tangy, spicy and sweet Mee Goreng (Fried Noodles) for a quick lunch. 🥤

Yields: 2-3 servings
Ingredients:
2-3 servings yellow noodles, 1 pack firm tofu, pan fry or air fry, half or 1 cup of choy sum/bok choy, 1 tomato (diced or wedged), bird’s eye chili/red chili pepper(to adjust spiciness), water, oil and salt to taste. Calamansi lime for juice and decoration.

For the sauce:
2 tsp dark soy sauce
2 tbsp ketchup
1-2 tbsp sambal oelek/chili sauce
(I use sambal oelek)
1tbsp curry powder
2 tbsp light soy sauce

The yellow noodles are best to blanch in hot water for a few seconds until it loosens. Once the noodles are no longer stick together, remove, drain, and set aside. It is easier to fry mee that do not stick together.
